WISE is a London kombucha microbrewery, botanical bar & closed-loop fermentation space in Kentish Town

We are a small, wild ecosystem rooted in craft, care, family and community. A little fermenting heartbeat on Kentish Town Road, staying close to the people we serve. Everything here is 100% plant-based, organic where possible, and made with deep intention. 

From our live, small-batch kombucha brewed on site, to kombucha kocktails, botanical mocktails, low-intervention European eco wines, UK independent craft beers, spelt focaccia aperitivos and comforting plant-led pies, Wild IS Earth invites you to step inside, escape the street and reconnect.

A Lineage, Not Just a Location: The Tolli Story

Once known as Tolli Italian Patisserie opened in 1988, this ground floor holds the memories of my childhood. I am Tolli’s eldest daughter. The red brown tiles beneath your feet saw cakes, croissants, homemade ciabatta, escalope, fresh pasta, coffee, noise, family and graft — all made by Mamma and Papà’s hands every morning. 

This place carries our resilience, our roots and our stories.

Today, Tolli has evolved into Wild IS Earth. With patience, tenacity and the hope that the community still believes in family-run spaces, I am opening a new chapter — updated, yes, but deeply re-rooted into the high street that raised me.

I believe that what we take should be honoured, transformed and returned whenever possible. This philosophy is the heartbeat of both the space and the products we create.

How Your Visit Matters: Our Closed-Loop Vision

Wild IS Earth is built slowly, with heart. No corporate investors — just graft, imagination and a commitment to reducing waste wherever possible. Every time you step through our door, you are supporting a circular, conscious ecosystem:

  • Local Fermentation: Our live, unpasteurised kombucha is brewed on site using real whole-leaf tea, FairWild nettles and slow, honest methods.

  • Closed-Loop Craft: Spent tea becomes mushroom substrate. Surplus SCOBY becomes food, edible experiments and dehydrated material. Every bottle returned helps close the loop.

  • A Space for People: More than a bar, Wild IS Earth is a soft place to land: a home for artists, makers, workshops, circles, fungi growers, curious drinkers and community collaborations.

  • Mindful Purchasing: Every drink, tasting, bottle return and visit supports independent circular production, creative workshops and the revival of an authentic family space on Kentish Town Road.
