Modern drinks replaced that with artificial ingredients and stripped gut health. At our botanical bar, we do things differently. We honour microbial character, working slowly in small glass jars to let each batch develop its own unique identity—like different plants under the same umbrella.

We never strip the naturally occurring alcohol created through real fermentation. Our ABV starts at 0.2% and naturally varies up to 2.1% (or higher in special ferments) depending on temperature, time, and microbial personality.

WILD FERMENTATION

Non-inoculated, unpasteurised processes that honor the raw intelligence and natural variation of nature.

A traditional method where a portion of a mature previous batch protects the fresh brew, naturally lowering pH and introducing robust, healthy Acetic Acid Bacteria (AAB).

First fermentations take place exclusively in glass jars—a non-reactive environment perfectly suited for acidic, living ferments.

WHAT GOES INSIDE

Our process begins with premium organic loose-leaf tea, structured water, and a dynamic mother culture. We exclusively source from non-GM, certified Organic and FairWild farmers to ensure absolute purity and sustainability.

1. The Custom Camellia Sinensis Tea Blend
The quality of our tea directly impacts the antioxidant potency and vitality of our live SCOBY. We use a meticulous blend of loose-leaf organic teas:

  • Black Assam (Camellia sinensis var. Assamica): Renowned for its rich, malty aroma; packed with antioxidants to support heart health and immunity.

  • Green Sencha: Harvested early from top buds, providing heavy antioxidant support linked to cognitive health and longevity.

  • White Tea: Harvested just before the leaves fully open, offering delicate, high-potency protection against oxidative stress.

2. Wild Bitter Nettles (Urtica dioica)
Hailed as one of the most nutritious permaculture plants on Earth. Our Naked Nettles kombucha serves as our signature base—infused with antihistamine-rich, organic wild nettles that positively interact with the gut microbiome and alleviate chronic inflammation. From this nutrient-dense base, all of our seasonal flavours are born.

3. Strategic Sugars
Sugar is entirely for the microbes, not for you. We feed our live culture a dynamic blend of coconut, cane, and muscovado sugars. This diverse sugar profile supports distinct beneficial microbial communities within the SCOBY. Our sustained fermentation process allows the microbes to consume nearly all of it, leaving a crisp, low-sugar brew where final sweetness comes purely from the fruits added in the second fermentation.

4. Filtered Water
We utilise an Italian-engineered filtration system that purifies the water while perfectly retaining essential natural minerals like magnesium, iron, and calcium to keep the ferment thriving

THE BOTTLE & CARE INSTRUCTIONS

We serve our kombucha in reusable, UV-protected, thick ceramic flip-top bottles finished with compostable labels. This ensures your living elixir is shielded from light exposure and safely supports natural, raw carbonation.

STORAGE: Do not shake. Keep refrigerated as will continue to ferment and increase ABV. Real kombucha never truly goes off; it simply continues to slowly mature and evolve in flavour as a living drink.
THE 'BURP' FACTOR: Once opened, it will keep beautiful, stable flavour in the fridge for 4–5 days if sealed. However, if left completely un-burped, open with caution, as natural carbonation buildup can cause it to spray or erupt. Treat it with the respect a living drink deserves!
