Celebrate slow growth and the quiet magic of fungi as we gather at the Wild IS Earth Microbrewery — a wild, fermented & fungi-led events space — for an evening where kombucha, wild plants, flavour and creativity intertwine.

Aperitivo Fridays invite you into the Wild IS Earth Microbrewery — a living, working space devoted to kombucha, fungi, wild plants and low-waste creativity.
Here, drinks, food and conversation ferment side by side. Expect a relaxed atmosphere, thoughtful flavours and dishes designed to be shared.
How the evening works
From 6pm, the bar opens and the microbrewery settles into its warm, candlelit evening rhythm.
Arrive anytime — start at the bar, or join the optional 6pm mezzanine kombucha tasting with Livia.
The tasting lasts around 40 minutes, featuring a flavour-first flight of small-batch kombuchas brewed on-site using FairWild nettles, whole-leaf teas and the slow Wild IS Earth method.
It’s intimate, curious and crafted — a gentle introduction to the WISE ethos.
The mezzanine kombucha tasting (optional)
Up on the mezzanine overlooking the brewery bar, Livia leads a flavour-first flight of small-batch kombuchas brewed on-site using FairWild nettles, whole-leaf organic teas and the slow Wild IS Earth method.
The session is intimate, curious, crafted — a soft introduction to the Wild IS Earth ethos of slower culture, living ingredients and mindful flavour.

Expect playful, fermentation-forward drinks such as the Beet Negroni, Bloody Mary Booch, Fiery Mule, Fungi Chinotto Martini, and our Glowing Skin Mocktail.
Spelt Focaccia Wild Bite
Rooted in Tolli family heritage and shaped by a Britalian sensibility, our plant-forward Aperitivo Bite celebrates seasonality and low-waste flavour.
Toppings may include:
Kombucha-caramelised red onions
Homegrown oyster mushrooms sautéed with kombucha, parsley & garlic
House ferments
Seasonal wild greens
Sometimes the kitchen becomes a creative playground for local cooks; on other nights, it returns to Wild IS Earth staples and seasonal experiments.
The Flow of the Night
The bar stays open until 11pm, serving kombucha cocktails, botanical mocktails, low-intervention wines and soft global grooves.
Optional slow-creative prompts or community moments may emerge for those who want to linger, reflect or connect.
