Celebrate slow growth and the quiet magic of fungi as we gather at the Wild IS Earth Microbrewery — a wild, fermented & fungi-led events space — for an evening where kombucha, wild plants, flavour and creativity intertwine.

Aperitivo Fridays are slow, flavour-led Friday nights rooted in fermentation, seasonal cooking, and shared culture.
We gather inside the Wild IS Earth Microbrewery — a living, working space devoted to kombucha, fungi, wild plants, and low-waste creativity — for an evening where drinks, food, and conversation ferment side by side.
Expect a relaxed atmosphere, thoughtful drinks, and food designed to be shared.
How the evening works
From 6pm, the bar is open and the space comes alive.
You’re welcome to arrive anytime, start the evening at the bar, or optionally begin upstairs at 6pm in the mezzanine with Livia for a guided kombucha tasting.
The guided tasting lasts around 40 minutes.
Afterwards, everyone drifts downstairs, joining those who’ve headed straight to the bar, as the evening opens out.
The mezzanine kombucha tasting (optional)
Up in the mezzanine above the brewery bar, the guided tasting features a flight of small-batch kombuchas brewed on site using FairWild nettles, whole-leaf organic tea, and the slow Wild IS Earth method.
The session is intimate and flavour-first — a gentle introduction to the Wild IS Earth ethos: curious, crafted, and rooted in slower culture.
Drinks at the bar
The bar remains open throughout the evening, serving:
Kombucha on tap and by the bottle
Kombucha cocktails (alcoholic & non-alcoholic)
European low-intervention wines
A small, growing selection of craft beers
Expect playful, fermentation-forward drinks such as the Beet Negroni, FireRYE Mule, and Fungi Chinotto Martini, alongside non-alcoholic options including mushroom beer and seasonal ferments.
Aperitivo bites
Aperitivo bites are rooted in quiet honour of the Tolli family heritage, shaped by a Britalian sensibility and kombucha-forward flavour, with a strong focus on local sourcing, seasonality, and low-waste practice.
Bites may include spelt focaccia, homegrown oyster and seven-medicinal-mushroom pâté, kombucha-caramelised red onion marmalade, seasonal ferments, and more — always plant-forward and designed to pair with the drinks.
At times, the kitchen also becomes a space for local creative cooks and collaborators, invited to experiment with kombucha and ferments. On other evenings, the menu returns to familiar Wild IS Earth seasonal staples and ongoing experiments.
The bar stays open until 11pm, serving more kombucha cocktails, low-intervention wines, and cosy global grooves — with optional slow, creative prompts for those who wish to linger, reflect, or connect.
