Live SCOBY: Here we use an organic wild mother culture that has matured since the WISE beginnings. In the Kombucha brew, yeasts and bacteria (Acetic Acid and Lactic Acid) play crucial roles. Our process that involves 'back slopping,' (adding a portion from a very old previous batch of the same ferment) boosts beneficial microbes and lowers the pH of the solution, ensuring a thriving population of acetic acid bacteria to ferment the sugary tea into Kombucha.

Sugar: The choice of sugar is a pivotal factor in Kombucha brewing, significantly impacting the bioactive properties, flavour, and final composition of the brew. At WISE Kombucha, we utilise a blend of coconut, cane, and muscovado sugars to ensure comprehensive coverage that supports distinct beneficial microbial communities in the SCOBY. This influences both the antimicrobial and probiotic properties of the Kombucha. Our sustained fermentation process allows the microbes to consume more sugars, resulting in a brew where sweetness mainly comes from natural sugars in added raw fruits during the second fermentation. We are committed to producing a delicious brew that fosters a healthy gut microbiome.

WISE TEA

At WISE Kombucha, we meticulously craft our kombucha using traditional methods and authentic tea leaves from the Camellia sinensis plant, ensuring the preservation of unique health benefits.

Research and Quality: Studies have shown that the use of Camellia sinensis tea leaves maximises health benefits by providing a variety of antioxidants unique to tea, which are retained in the Kombucha brew. The quality of tea directly impacts the antioxidant potency and the ability to maintain bioactive properties during transport, storage, and shelf life.

Tea Types: Each of the six main tea types—Green, White, Yellow, Oolong, Black, and Dark—contributes unique properties to Kombucha production, with varying impacts depending on tea quality. At WISE, we exclusively use loose, premium organic green, white, and black tea leaves to optimise SCOBY vitality and deliver maximum health benefits in a well-balanced, flavourful brew.

Tea Varieties- Our commitment to quality is reflected in the specific tea varieties we use:

  • Camellia sinensis var. Assamica | Black Assam: Renowned for its rich, malty aroma, Assam tea offers numerous health benefits, including being rich in antioxidants, promoting heart health, boosting digestion and immunity, and potentially reducing the risk of cancer.

  • Green Sencha: Harvested early from the top buds and leaves of tea plants, green sencha is rich in antioxidants, associated with cognitive health, weight management, cancer prevention, heart health, longevity, oral health, diabetes management, and neurodegenerative disease support.

  • White Tea: Harvested from leaves and buds just before they fully open, white tea is rich in antioxidants and may reduce the risk of heart disease, aid in weight loss, protect teeth from bacteria, fight cancer, lower insulin resistance, and protect against osteoporosis.


Nettles (Urtica dioica): Hailed the most nutritious permaculture plant on Earth. Wild nettles, a herbaceous perennial native to Europe, are rich in essential nutrients and have been found to positively interact with the gut microbiome, regulate glucose release, and alleviate chronic inflammation in the body.

  • Ms Beet (F2): Made with beetroot, a fantastic source of vitamins and minerals rich in antioxidants, this flavour is perfect for a boost anytime of the year.

  • Wild Flowers (F3): A delightful collection of in season edible flowers and cloudy apples. Usually also medicinal with nettle infusion, marigold, elderflower and hibiscus.

  • Cherry Berry Dallaway (F4): Dallaway Kentish Cherries, rich in anthocyanins with well-established health effects and prebiotic properties. Cherries are known to protect against neurodegeneration, cancer, diabetes, and obesity, while promoting gut health and beneficial gut microflora.
