Wild IS Earth is a London kombucha microbrewery, botanical bar, wild bites kitchen and closed-loop fermentation space in Kentish Town.

Here, drinks, food and conversation ferment side by side. Expect a relaxed, candlelit atmosphere, thoughtful flavours, living drinks and plant-led bites designed to be shared.

We serve small-batch live kombucha on tap and in reusable 330ml bottles, with 50p off bottle returns, alongside botanical kocktails, botanical mocktails finished with a dash of live kombucha, low-intervention eco wines, UK independent craft beers and organic plant-based aperitivo bites.

Our closed-loop system transforms spent tea into mushrooms and surplus SCOBY into biomaterials for art, design and experimental food. A home for fermentation, creativity and community.

How the evening works

From 4pm, the bar opens and the microbrewery settles into its warm evening rhythm.

Arrive anytime — start at the bar, settle in with drinks and bites, or join the optional 6pm Mezzanine Kombucha Tasting with Livia.

Book ahead for the 6pm tasting.

The tasting lasts around 40 minutes and features a flavour-first flight of small-batch kombuchas brewed on-site using FairWild nettles, whole-leaf organic teas and the slow Wild IS Earth method.

It is intimate, curious and crafted — a gentle introduction to the WISE ethos of slower culture, living ingredients and mindful flavour.

The mezzanine kombucha tasting (6pm)

Up on the mezzanine overlooking the brewery bar, Livia leads a flavour-first flight of small-batch kombuchas brewed on-site.

You’ll taste through seasonal flavours, learn how the kombucha is made from scratch, and hear the story behind the Wild IS Earth method — from whole-leaf teas and botanicals to fermentation, flavouring and the closed-loop ecosystem behind the brewery.

A soft, sensory introduction to living drinks, slow culture and the quiet magic of fermentation.

Spelt Focaccia Bites

Rooted in Tolli family heritage and shaped by a Britalian sensibility, our plant-forward aperitivo bites celebrate seasonality, fermentation and low-waste flavour.

Toppings may include kombucha-caramelised red onions, homegrown oyster mushrooms, house ferments, and seasonal wild greens.

Sometimes the kitchen becomes a creative playground for local cooks; on other nights, it returns to Wild IS Earth staples, humble pies and seasonal experiments.

The Flow of the Night

The bar stays open until 11pm, serving seasonal kombucha kocktails, botanical booch mocktails, low-intervention eco wines, UK independent craft beers, bar snacks, humble pies and soft global grooves.

Optional slow-creative prompts or community moments may emerge for those who want to linger, reflect or connect.

Aperitivo Evenings are an invitation to slow down, sip deeply and settle into the living ecosystem that is Wild IS Earth.
